I always find my appetite lighten this time of year. That means sandwiches are no longer confined to lunch but can grace the dinner plate, too, even if we’re not going outside for a picnic. In the spirit of the soup-and-sandwich dinner, this picnic-style meal features a cool crunchy filling on wholegrain bread paired with one of my favorite grain salads, a spicy barley dish laced with diced fresh veggies. To finish it off are crunchy, fruit-studded cookies.
