Memorial Day Countdown Dinner

Early April is a tricky time of year. We’re ready for vegetables and sunshine, but both are still intermittent parts of our lives. With every unseasonably warm day, and with every new bunch of greens at the Farmer’s Market, we think spring is here. And it is-we just forget that spring is rainy and cold. So thus we set our sights on Memorial Day, and let the countdown begin to a time when the markets are full, and it’s enjoyable to be outside. This menu takes all the great aspects of summer meals-potato salad, burgers on the grill, and ice cream (!!)-and makes them seasonally appropriate for right now. Since it’s chilly out, we make our potato salad in the skillet and drizzle our ice cream with luscious hot fudge. If you don’t want to venture out to the grill, simply cook your burgers indoors on a stove-top grill pan or cast iron skillet. Whether there’s just two of you at the table, or you make this into a full-fledged indoor BBQ, this menu will surely make you excited for summer, and keep you satiated while counting down the days until it’s here.
