Roasting Chicken Breasts
Preheat the oven to 450°F. Arrange bone-in skin-on chicken breasts on a foil-lined baking sheet. Brush with olive oil or melted butter and season very generously with salt and pepper. Roast for 25 to 30 minutes, until the chicken is cooked through and the skin is crisp. Allow to rest for 10 minutes. Then remove skin (cook’s snack!) and bones and cut into chunks, or use as instructed in your recipe.
