Baked Brie with Apples

If you have an abundance of apples, as many of us do this time of year, this apple pie is a perfect way to use them up. Part of a complete apple feast.

Julie Sophonpanich and Zoe McKinnell are seniors and roommates at Brown University. They love hosting themed dinner parties for their friends and exploring various restaurants together.

Baked Brie and Apple
Recipe Adapted from LCBO Food&Drinks
Serves 6-8

Ingredients
Round Brie
1 large apple
3 tbsp butter
1/2 cup apple cider
2 tbsp brown sugar
a pinch of cinnamon
rosemary (to garnish)

Preheat the oven to 350°F.

Wash and peel the apple. Slice into thin wedges.

Melt the butter in a pan on medium heat. Add the apple wedges and saute until golden brown. Add apple cider, brown sugar, and cinnamon. Let the concoction simmer for about 5 minutes. Let cool.

While the apples are cooling down, prepare the brie by piercing it with a fork.

Once the apple wedges have cooled to room temperature, take the apples out of the pan and place them on the brie. Add rosemary to garnish in the center or sprinkle rosemary leaves on top of the apples.

Bake for 10 minutes.
