Flourless Chocolate Brownie Cookies

Ingredients
  • 2¼ cups powdered sugar
  • 1 cup cocoa powder
  • 1 teaspoon espresso powder, optional
  • ¼ teaspoon salt
  • 3 egg whites
  • 2 teaspoons vanilla extract
Instructions
  1. Preheat the oven to 350°F and grease or line 2 cookie sheets with parchment paper. In a medium bowl, stir together all ingredients. Drop by heaping tablespoon onto the prepared baking sheets. Bake for 8 to 10 minutes, until the cookies are firm on the edges, shiny, and starting to crack a bit. Let cool for a few minutes on the baking sheet before cooling on a wire rack.
