Japanese Pancake Supper

Savory pancakes, known as okonomiyaki, with their crispy edges and spicy mayo sauce, are surefire all-veg winners. They’re satisfying enough that I sometimes just eat two with no side dish. But to extend this recipe to serve a slightly bigger crowd, round out the pancakes with a hearty vegetarian side: roasted root vegetables doused in the most delicious sesame sauce. To finish, a cake made from Japanese persimmons, an unusual and beloved fruit.
