Moules Frites with a Spin

One of my favorite meals of all time is moules frites. Translated, that means “mussels plus french fries equals delicious.” Sadly, les moules are a restaurant dish that doesn’t translate perfectly to the home kitchen. Mussels are inexpensive and quick-cooking, but they require last-minute attention, as do frites. Eliminate the fries, and mussels become a fantastic at-home dinner for entertaining or just for two. But then you’ve eliminated the fries.

My solution? Simply bake some sweet potato fries, which roast unattended for 45 minutes while the mussels come together. Since these fries won’t absorb as much sauce as your typical russet wedge, be sure to have plenty of [no-knead] bread for dipping.
