Christmas Morning Breakfast

Christmas morning is the highlight of most kids’ years. But even if we don’t believe in Santa Claus anymore, some of us twenty-somethings are still just as enthusiastic about wearing matching pajamas and opening presents as we were when we were 5. While there may be more excitement and cheer than on most mornings, Christmas breakfast still requires the same BGSK entertaining considerations.

Where brunch is concerned, we always recommend having only one item that requires your attention stove top. In this case, we’ve recommended these seasonal, festive pumpkin pancakes. The savory accompaniment, baked eggs with smokey potatoes, requires little to no effort the morning of. Simply throw the dish in the oven, and return your attention to guessing what’s inside that strangely wrapped blob sitting under the tree with your name on it. Sip chai tea lattes and nibble on some make-ahead coffee cake, and you’ll have plenty of energy for all that paper tearing, and the delicious breakfast that follows.

    Breakfast is one of our favorite family meals everyday, but Christmas makes it seem extra special. We’ll probably jazz up our bowls of Kellogg’s FiberPlus(R) cereal with a few festive ingredients link cinnamon and dried cranberries or top off some waffles with something similar. We’ll definitely be keeping it simple though so we can save up our energy for opening all the presents under our tree. Have a happy (and healthy) holiday!
