There are some weekends when you just know that you are going to spend Sunday morning, afternoon, and potentially evening hungover, eating foods with high fat and carb content. But there’s another approach. If you anticipate these weekends-and big birthday parties are a sure indicator-you can plan ahead and either make a big reservation at a dim sum palace in Chinatown, or invite your friends over to share in your hangover with you at home. As with all hangover brunches, the key here is to make everything in advance, so that all you have to do the morning of is roll out of bed, pre-heat the oven, and remove the caked mascara from your eyes. For this menu, we give our hangover brunch a fall twist with spinach, apples, and plenty of spice. Make the chai concentrate and the apple cake the day before, and assemble the strata so it is all ready to bake. If you want to make it a real hangover party, double the strata recipe to feed 8.
