Gluten-Free Friday Night Dinner

The ultimate goal when you’re a host who must inflict your own dietary restrictions upon your guests is for no one to ask the dreaded (passover-themed) question: why is tonight different from all other nights? At Phoebe’s apartment, dinner is different these days because it is all gluten-free. If you’re inviting over a group of friends who do not share your gluten-intolerance, it’s best to go with main course dishes that don’t seem out of the ordinary, like paella.

This version, which uses Asian flavors, is clearly a different version than all the other nights Phoebe’s served the dish. Still, the smoky seafood and rice do the trick, satisfying guests without alerting them to the fact that the meal is gluten free.

You can get away with just one vegetable side, since paella has both carbs and protein, but we’ve given you two good options, one hot, one cold. To finish things off, a creamy coconut pudding that will make you think, “If this is what it’s like to eat gluten-free, I want to do it every night!”
