Summer Salad Buffet

Come summer, our appetites shrink, as does our desire to turn on the stove. Our cravings for salad, dormant all through the long winter and spring, comes back with a vengeance. There are nights now when it stands strong as a side dish, but there are also times when we go further than that: we toss together a hearty salad and call it a meal. And, for this buffet, we make big portions of several different kinds of salad, invite over a bunch of friends, and let everyone fill their plates will cool vegetables, potatoes in savory dressing, and slices of fresh mozzarella. (For a more traditional dinner, you can always assemble most of these salads, then throw some kind of protein on the grill to round out the meal.)
