April showers have kept us happily by the stove, cooking up all the great spring fruits and veggies that are beginning to show their faces at the farmer’s market. If your eye is not only on vegetables, but also on your waistline, there’s no better way to enjoy your produce than by steaming it.

    I recently started picking up a weekly farm box from a local organic farm in my area, so each week is like a goody box of new treats. I love the fact that I never know what I am going to get and each week there is invariably something I have never cooked with before so I am forced to find a new recipe and try new things.
    Last week it was rainbow chard, the week before it was eggplant. I can’t believe I have never cooked eggplant before. I have eaten it, never cooked it. So I am most looking forward to all of Spring’s bounty, and the new booty in my farm box. Bring it on!

    I’m experimenting a lot with artichokes this spring, and I can’t wait for summer tomatoes to hurry up and get fresh. I’m trying to reduce/replace pastas and breads with alternatives like quinoa, or use heartier veggie servings and remove pastas and grains altogether (occasionally). My themes are fresh, light and simple this spring!

    Hi Girls,
    I do need a new steamer for my homemade tamales! Yes, it’s a tradition in our family that we make tamales for our family celebration during holiday time, and now for Mother’s day (spring time) too! I use a steamer to cook our favorite Mexican meal!!
    We put them in the steamer standing side by side and cover with a damp dish towel , put the lid on , steaming them and 1 hour later DONE!! The steamer works the best!! Let me know what you think!

    Basically, I’m looking forward to just cooking more veggies in general. Steaming them with a little cheese and marinara sauce makes this Italian much more likely to eat healthy!!

I don’t know if there is a name for it, but I tasted it when I was in Michigan for a conference and it was AWESOME!!! A nice crispy crust with fig preserves or jam, crumbles of feta cheese, a spring mix of greens (spinach, arugula) along with some cilantro and well-seasoned grilled chicken!!! Very simple, but so yummy! I’m looking forward to recreating this awesome pizza :) and maybe pair it with a frozen strawberry MOJITOOOO <3 lol. I may use Chicken/Feta/Spinach sausage crumbles instead of grilled chicken and of course extra feta and greens :) Ooooh, I may even try it with prosciutto!! :) Okay…I'm done.     Even though I “like” you in general, I also “like” your FB page and get your newsletter, Now here’s what I am excited about cooking: Anything that I can use the 3 gallons of shellfish stock that I just made. Went to a dinner party with friends, lobster galore..AHHH, don’t throw out the carcasses, I’m going to make stock and in the freezer they went. Next weekend out to the beach house, and crabs and muscles…AHHH, don’t throw that away…I’m going to make stock! So now I sit with 3 gallons of shellfish stock all done up in frozen little ice cube sized gems of goodness, ready to nage my way to culinary infamy amongst my friends and neighbors. BTW, guess what people get as “gifts” when they leave my house? Most ask, what do I do with this? LOL, USE IT!

    The dish I am most excited to make this spring will take full advantage of the fresh, local produce at the nearby farmer’s market. I’m thinking of sauteed asparagus, pea risotto, a salad of avocados, red onions, and peaches, grilled corn on the cob with lime butter, and homemade New England clam chowder.
