Carrot-Miso Dipping Sauce

Ingredients
1/2 cup rice vinegar
1 cup water
1/2 cup white miso
¼ cup tahini paste
2 medium carrots peeled and chopped
2-inch ginger, peeled and chopped
2 garlic cloves, chopped
1/4 cup fresh lemon juice
1/4 teaspoon cayenne pepper
freshly ground black pepper
3 tablespoons sesame oil
2 teaspoons honey
Combine all ingredients in a blender until smooth. Serve as a dipping sauce or a salad dressing.
