Middle Eastern Vegetarian Dinner

This Middle Eastern vegan menu is more than the sum of its relatively humble parts. Regular old chickpeas become tasty burgers; cous cous is enlivened with herbs, fruit, and spices; and even plain roasted cauliflower gets a boost from the spice cabinet. For dessert, relatively healthful cookies. This menu works both as a casual dinner for two, and as a buffet even non-veg heads will enjoy.
