Roasted Carrots
Serves 4

Making these is so simple it’s absurd. They’re a great accompaniment to pretty much whatever you’re eating for dinner, and they can even sub for hash browns at lunch. Read the original post here.

Ingredients

1 bag baby carrots
1 tablespoon olive oil

Preheat the oven to 375°F. Combine the carrots and oil together on a baking sheet. Bake, tossing occasionally, for 30-40 minutes, until the carrots are browned. Sprinkle with salt and serve, hot or room temp.
